    Twenty-two years of culinary dedication have earned Acqua Phuket many coveted awards. Chef Alessandro Frau explains the philosophy behind his enduring success

     A LEGACY OF EXCELLENCE 

    Sitting across from Chef Alessandro, in his original Phuket establishment, I’m struck once again by the elegance that has defined Acqua over the years. The restaurant, recently nominated as ‘Best Fine Dining Restaurant’ in the prestigious 2026 ‘Clique Dining Awards’, hums with the quiet confidence of a venue that has spent over two decades perfecting its craft. It’s a testament to vision, consistency, and an unwavering dedication to the art of Italian cuisine. 

    THE VISION THAT STARTED IT ALL 

    “This nomination means everything to us,” Alessandro tells me, his Italian accent still rich despite his years in Thailand. “It validates the journey we began here in 2004.” That journey started with a young chef arriving on Phuket’s shores, seeing potential where others might have seen only paradise. Alessandro recognised the island’s cosmopolitan appeal, its growing international clientele, and the creative energy that permeated its shores. What he envisioned wasn’t merely another restaurant – it was an experience.

    CRAFTING MOMENTS, NOT JUST MEALS

    “We never wanted simply to serve food,” he explains, gesturing expressively. “Our ambition was to craft moments where exceptional Italian cuisine met genuine warmth and hospitality. It’s about how guests feel, not just what’s on their plate.” This philosophy has clearly resonated. Over the years, Acqua has evolved into one of Phuket’s most distinguished dining destinations, a place where authentic Italian culinary traditions merge seamlessly with contemporary techniques and presentation. The menu showcases carefully sourced ingredients, many imported directly from Italy, prepared with modern finesse whilst honouring traditional methods. 

    THE POWER OF CONSISTENCY AND IDENTITY

    But what truly sets Acqua apart, Alessandro insists, is consistency. “In this industry, every detail counts,” he says emphatically. “Phuket’s dining scene is fiercely competitive. You must continuously refine your offering whilst remaining authentic to your core identity. We’ve invested heavily in our team, evolved our menu constantly, yet never compromised on standards.” The restaurant’s name itself embodies Alessandro’s culinary philosophy. “Acqua – water – represents fluidity, vitality, purity, and transformation,” he explains. “Our connection to the ocean is fundamental. We’re surrounded by it here, and it influences everything we create.” Premium seafood features prominently on Acqua’s menu, prepared with the seasonal sensibility and respect for ingredients that defines Italian cooking at its finest. 

    FROM PHUKET TO BANGKOK: SHARING THE VISION

    The success in Phuket inevitably led to expansion. In 2021, Alessandro opened Acqua Bangkok, responding to years of encouragement from capital-based guests who’d made pilgrimages to the island venue. “Bangkok represents one of Asia’s most dynamic culinary landscapes,” he notes. “The timing felt right to share our vision with a new audience.” Interestingly, the Bangkok venue isn’t a carbon copy of its predecessor. “Each destination possesses its own character,” Alessandro observes. “Phuket embodies relaxation and island living. Bangkok pulses with metropolitan energy. Whilst our commitment to quality and hospitality remains identical, the atmosphere differs – more refined, suited to the city’s sophisticated business clientele.”

    The Bangkok location, nestled between Ploenchit and Chidlom amongst the capital’s luxury establishments, maintains the same menu but with an ambience reflecting urban elegance. “Reproducing a successful culture across locations presents greater challenges than simply opening a restaurant,” Alessandro admits. “It demands rigorous standards, exceptional team-building, and unwavering vision. Fortunately, we’ve assembled professionals who genuinely understand what Acqua represents.”

    PRIORITISING EXCELLENCE OVER EXPANSION 

    As our conversation draws to a close, I ask about future plans. Alessandro’s response is characteristically measured. “We prioritise excellence over expansion. Bangkok marks an important chapter, but our focus remains on continuous improvement and sharing our passion with those who appreciate genuine hospitality.” With the ‘Clique Dining Awards’ recognition affirming what discerning diners have known for years, Acqua’s journey from Alessandro’s 2004 dream to Phuket’s fine dining cornerstone is complete – yet simultaneously just beginning.
